Peach Cobbler Muffins

Ingredients

2 peaches (fresh)

200g buttermilk

2 eggs

65g butter room temperature

1 tsp baking  powder

1 tsp cinnamon

1 tsp salt

100g white sugar

50g brown sugar

400g flour

Streusel topping

30g whole oats

30g brown sugar

40g flour

10g butter melted

Method

Preheat your oven to 180 degrees C

In a bowl, combine all wet ingredients and mix well

Add your dry ingredients into the wet ingredients and combine, don’t over mix at this point

Roughly dice your peaches (I keep the skin on) and gently fold into the muffin mixture

Spoon batter into muffin tin, this recipe makes 10-12 muffins

For the streusel topping, melt the butter and add to dry ingredients to combine and sprinkle over the top of the muffins

Bake in the oven at 180 degrees C for 20-25 minutes or until golden brown on top
