
Shrewsbury Biscuits
Ingredients
323g buttermilk
120g starter
250g butter
320g icing sugar
850g flour
1 jar jam of choice
Method
Preheat your oven to 175deg
Mix all ingredients in a bowl until combined, the dough should be soft but come together well, if too sticky add more flour
Flour your bench top and roll out until 3-4mm thick, then using a cookie cutter cut into an even number, you will need to re-roll the dough a few times
Bake in the oven for 10 minutes at 175deg- they will be pale but cooked through
While the biscuits are warm, cut out a little hole in the centre of half of the biscuits (this is the top biscuit) & let cool
Heat your jam in a saucepan until it starts to simmer (choice: strain the seeds from the jam with a sieve)
As the jam starts to cool, spread over the bottom biscuit without the hole & then place biscuit with hole on top!
